This is a proper marmalade with backbone.
Locally grown navel oranges are sliced by hand, peel left generous so you get real texture, then simmered slowly until the fruit turns glossy and rich. The scent alone is enough to stop you in your tracks.
Once the citrus has softened and the sugar has settled, a measured splash of whisky goes in. It does not overpower. It deepens. You taste the brightness of orange first, then a gentle warmth that lingers quietly at the end.
It sets with a soft, traditional wobble and spreads thickly over hot toast, crumpets or folded through warm sponge.
